As crazy as it sounds, I use a meat thermometer 
made for professional chefs.  My son (who is a 
chef) gave me my first one.  Actually he gave it 
to his mother to use in the kitchen.  She really 
wasn't taken with me using it for a fishing 
thermometer so I think I paid $25 for one of my 
own.  They clip in your pocket like a pen, they 
are hell for stout and best of all they are 
fast...2 or 3 seconds to arrive at a stable temp.

You can get them at any supply house that caters 
to the restaurant trade.  I bought mine at United 
Grocers here in Portland.
