Alan when you connect your iPad to iTunes via USB cable it should backup automatically and then sync automatically. You don't go to File > Devices...
Check in iTunes > Preferences - Devices that you DON'T have 'Prevent iPods, iPhones, and iPads from syncing automatically' selected.
