OK posted a message in the forums over at SapphireSteel regarding my experience so far.

All in all I think if it will work, RubyInSteel could be a kick-ass IDE for working with Ruby and Watir both. I'm rather hoping that it's something simple I've not done right and not a bug, but we will have to see how the Sapphire people respond.
