You have a few options depending on the email client you use: 

1. GiantCompany's Spam Inspector (this is the best one imho) and they have
plugins for several kinds of email software. This is not free. Lots of
settings to counter spam. http://www.giantcompany.com/

2. Mailshell's SpamCatcher -- quite good in catching spam and you can set
your own "tolerance level". At a 50% level, I hardly receive any of those
'cheap' emails. Both of the above 2 tools have never caught a legitimate
email for me, but these are not free. http://www.mailshell.com . With these
people, you could also sign up for an email account (e.g., [EMAIL PROTECTED])
which actually pulls email from your existing email account. (So you access
email through pop.mailshell.com but your friends still continue to send you
email at [EMAIL PROTECTED]). In my opinion, this is a little better than spamcop
where you need to pass around a totally new email address altogether. 

3. Cloudmark's SpamNet -- it is still beta software, and YMMV. I found it to
be so-so, but it is free and only has a plugin for Outlook at this time
(note this is NOT outlook express). 

4. Fourthly, you could sign up with Spamcop.net and get an email account
which is "scrubbed". 

Server side solutions such as spamassassin -- I have heard mixed reactions.
It worked very well for me for about 2-3 months, I was nearly enamored with
it and had huge white lists and blacklists. But it doesn't play too well
with qmail and started eating up my mail until I finally had to disable it
totally. 

Personally, I prefer setting up blacklist-associated rules directly in your
mail server, if you have the access, or client-side solutions these days are
fairly sufficient too. I (used to) get approx 200-300 spam mails a day so I
didn't mind paying for an efficient application at all.
