SFTP == (Secure File Transfer Protocol || FTP over SSH);

skEdit only supports SFTP, not FTP (though I think it may be in the
forthcoming beta).

Every OS has a built in FTP program :)  Just not necessarily a GUI for
the FTP program.  As far as GUI FTP programs for mac go (which skEdit
and TextWrangler both have built in FTP or SFTP, but you'll still want
to have a standalone FTP Client), Transmit from Panic software is
great, as is everything by Panic.
