Then he could add the Reply to: address being whatever he wants as his default address so when they click Reply it'll go to the POP server of his choice & not the ISPs.

I have seen in the past that when you do that on some lists (I am NOT
sure about this one), AFTER an original post hits the list,  and when
someone replies ON_LIST, the reply ONLY goes to the original poster
and NOT back to the list...
(Some Groups or lists can be set to do this by default for ALL
messages and I am not refering to a Group feature like that...)

Like I said, it may not do that "here", but it is a problem other places...
It might be a different "bad setting" at those places or something, but
nobody ever figured out why that happened and it was never fixed...
(We had to ask people not to post it that way...)

A better answer (FOR ME) has been to set up everything "normally"
and then either find an ISP that does NOT block port25,
OR (just as good) an e-mail hosting company (or service) that
uses ESMTP and higher port numbers (the port number to be determined
by them, so they can listen on that port...)
Sometimes when you call these other places (or e-mail their tech support)
they will either not know, or give out bad info... (Lots of luck...)

Google e-mail is currently using 465 and 995 and would be the
best, (easiest, and cheapest) way to find out more about higher port numbers.
Where I use it with other e-mail hosts, the help pages are all secure
pages (log-on to get there), and for members/customers only so I can't
send anyone there...
