Hugh,

Do you have a specification detailing the wattage/amperage supply that the
PSU should be able to provide on each line
If so, then it's worth checking on the various manufacturers sites ( or
google for a summary table) too see what the various devices take at
startup, and at max load

Then compare that to 75% of the rated loading, - no way should any PSU not
give a steady supply at only 75% of it's rating
( not that I'm saying yours is not much better, or that it's not that good -
but you never know, and you'll need specialist kit to impose the loading
needed to prove a 600 watt supply - Toms Hardware did some tests a while
ago, but that's probably part of the reason you chose the supply you got)

Also, it may be worth checking the fans with a meter to check for shorts as
they spin

( I got a duff fan a long while ago and it was shorting at 1 particular
place in its 360 revolution - real fun, because it never stopped at that
position, but in those days I had access to a very nice digital
oscilloscope - Mainframe engineers toy)

Seems stable today but will check and restart 2 or 3 times over the next few
days.

           exactly what I said.
