How can I go to a "customer" site to solve a problem when I don't know

You don't ;-)

You either have a spare computer at home you can test on, or use something like VMware or VPC to install and test with. Once you've tested it in a controlled environment, THEN, you go install it at a customers site.

Suppose I test an installation on two computers at home on a LAN. Will that
predict behavior and help me find the proper configuration for two computers
that are behind different routers on the Internet?

Can I set up one computer to be the controller for one remote computer and also
to be the remote computer for a different controller? I'd like my wife's to be
both, mine to be just a controller and her work machine to be a remote.

Treat everyone the way you want to be treated.
