I've never had any problem uninstalling the beta or RC versions so I would
expect that uninstalling still works.

But, for end users with no time to fight fires, new software should always
be greeted with the question:

"If it ain't broke, should I fix it?"

If you have the time to fight fires, then by all means go for it.  I've not
had *any* problems with IE7 ever since the first public beta.  The release
version is faster than any of the beta/RC versions, as one would expect now
that the debug code is removed or turned off.
