I don't use WiTango server on NT or Win2k but my first assumption would be that the word doc is being created on the server, or is it sitting on the server somewhere, and therefore should be accessible/customisable through OLE or some similar Windows method used to interact between programmes. I amn sure someone else out there will be able to give you a specifics, but that is where I'd start looking. Maybe a COM object?
