John, As the change of mode happens on tune or transmit, have you checked for RFI? I am not familiar with the IC-7300 settings, but in a couple of IC-7600 I have seen RFI change the of mode (e.g. from USB-D1 or USB to LSB) when transmitting. Change of TX filter width has also happened simultaneously with the mode changes, from the widest filter (3000 Hz) to the narrowest (500 Hz). Reducing the TX power and adding ferrites took care of it. Just a thought for your consideration.
The CI-V address difference between the Tarheel andthe IC-7300 is beyond me, but in the IC-7600 "CI-V Transceive" control should be set to OFF, to avoid CI-V and WSJT-X CAT control to fight for controlling the rig.
