Questions:

- What hardware platform (PDA/PNA/phone) are you running XCSoar on?

Altair glide computer, with Vega vario in my single seater
Navman EZY40 for use in club two seater when training/coaching
In the past, I ran XCSoar on an HP22xx with a serial connection to the FLARM

- What GPS are you using with XCSoar? Is it built-in to your PDA/PNA or connected to your PDA using a cable connection, or BlueTooth, or...?

FLARM for the Altair (and previously FLARM for the HP22xx)
Built-in GPS for the Navman

- Is your PDA/PNA connected to a soaring flight computer? If so, is it a cable connection or BlueTooth, or ...?

Not sure what you mean here - XCSoar is the flight computer.

- If you are using a BlueTooth connection -- is it reliable and easy to use?

No

- If you are using cables, where did you get them? I'd love to be able to supply Goddard built cables for XCSoar users. Any PDA/PNA connector wiring diagrams would be greatly appreciated.

The Altair comes with a wiring harness that includes RJ45 connectors for the FLARM and Vega
The Navman only requires external power (12v)
For the HP22xx I made up a cable by modifying a charging/comms cable designed to hook the HP22xx to a GPS for in car use.
