The Inbox Label page does not allow you to edit or delete the label of an inbox subscription whose tag is an intersection tag (that is, includes a '+' character). Consequently, you cannot assign a label to such a tag. Fortunately, however, you can still delete such a subscription from the Inbox by clicking on the 'X' next to the subscription link.
