Thanks All. Both suggestions worked just fine. Odd that Entourage doesn't do
this by default.
One more question for the experts. I did a bunch of re-colouring and
adding/deleting of categories as I attempt to implement GTD.
During the process I delete the 'Junk' category. Now the spam filter has chosen
one of my other categories, "Errands" and assigns all mail in the Junk folder
to this category.
How do I find where this is set and change it back to my re-added 'Junk'
category?

Do you not see the Folder column in your search results? If not then try
selecting View --> Columns --> Folder. It won't give you the full path to
the folder but you at least get the folder name.
