for some reason, I have a feeling that this problem was in previous
versions as well. I seem to recall people being able to change the
name of th ejunk category before.

you shouldn't be able to delete that category. It has an 'ID' of 1
and
is a reserved category.
the only thing to do now, is to rename your 'Errands' category to
'junk' and create a new 'errands' category.
If you can discover _how_ you managed to delete it, report this as a
bug using the 'send feedback' item under the Help menu.
