Hi Gareth!

Unfortunately, everything you're wanting is not supported. Because public
folders are not part of your Exchange account then, yes, you'll have to
manually sync. And categories have never synced between Entourage and
Exchange.

The only other option I can suggest is to see how a shared calendar or a
delegated calendar works instead of a public folder calendar. Again, because
that calendar is not part of your own Exchange account I don't have high
hopes, but it may be worth testing.
