I set up Mail and iCal to connect to Exchange Server 2007 (Note: ES 2003
does not work with Leopard). The set up was easy and seems to be working
fine.  If you have old e-mails on your exchange server, then they will
automatically synch. It may take time depending on the size of your Identity
database. 

Any subfolders created in Entourage and on your server will automatically be
created in Mail. If you do not run Entourage and its Rules, then you will
have to create new rules in Mail.

If you have old e-mails stored on your computer, you can use Entourage to
create an archive as an MBOX file and then import into Mail. (In Mail go to
File/Import Mailbox/Select MBOX).

I am playing around with the Mail/iCal/AddressBook programs but I still
prefer Entourage's integration better. Plus, I use Projects as my basic case
manager and the Apple programs don't have anything similar. Of course, a
preference for Entourage or Mail is like a preference for Word/Word Perfect
or Safari/Firefox; everyone is different.

The bottom line is that the Exchange Server integration works well, provided
you have Exchange Server 2007.
