Sorry, but you are mistaken.

'Out of Office' is handled (and very well) at the Exchange Server level. It is true that Entourage has no 'built in' Out of Office function for POP or IMAP accounts, and you have to use mail rules as you describe. However, both Outlook and Entourage can access the OOF† server settings. The Exchange support in Mail cannot - this is what I was commenting on.

† Ever wondered why an 'Out Of Office' function is called an OOF? Well, 'OOF' was a command used in the days of Microsoft’s Xenix mail system, which set a user as ‘Out of Facility’ - ie Out of the Office. The usage of the term ‘OOF’ just stuck, even when the terminology changed to 'Out of Office'.
