Believe it or not, I do most of those things using the abc
file format with a selection of abc tools:
voices - V1, V2, etc.
playback - ABCMus and others
cut/paste/copy - pick an editor that supports it
tablature - jaabc2ps and others
key / time signatures - add as needed
lyrics / fingering / chord symbols - add as needed
print ps format - abc2ps, jaabc2ps and others.  I use
ghostwriter/viewer and convert to pdf format when needed
MIDI input / output - midi2abc, abc2midi and others.  This
isn't as clean as I like since many like to add rests where
not requested, but there may even be a solution for that
file format conversions - pick as needed.  There are
several.

Most of the above are simply small tools that work with abc
format files (or produce them).  Additional tools will
surround multiple tools mentioned above and do those tasks
when called upon in a GUI environment.  Personally I just
use the command line approach with the exception of
ghostviewer when converting ps files to pdf files.
