I would think that you would need two sensors, one for each direction of
cut. Or move the sensor.

But you could cut in one direction, retract, return to the start,
increment the rotation and start the next cut.
Extra points if you work out a time delay between when the sensor read and
when the bit reach that spot.

If these are through-cuts you would just need a really long tool and an
approximate start depth.
Bornemann makes some long rasps for cutting foam - might work on pumpkin.
We have some 1/2" diameter 7" long ones on order.
