For the longest time I was running on 1GB RAM no problem, it was recent
that the VPS provider bumped me up to 2GB. Its doable.

Also keep in mind that some VPS systems can be running custom-made OS
images that are stripped down to bare minimum running components, which
allows for RAM saving. Even if the VPS ran out of Physical it'd just dump
some over to Swap which while undesirable isn't the end of the world.
