I remember that foot and mouth in the UK at one time almost stopped
   most sheep gut production; and so it follows that issues with BSE could
   also effect beef gut production. Indeed, it seems that Eu vetinary
   surgeons, have already intervened to ban some beef gut production
   experiments.
   I understand that beef-gut has to be split and polished before it is
   sent to the string maker; and this calls for very expensive machinery,
   and no doubt specifically trained people to use them.
   Probably, in the past this was done by hand. Very few beef producers
   can afford the machinery, and no doubt if  this "industrial" production
   is interrupted for any reason, it becomes very difficult to restart.
