Bacon  Tomato Toss
Yield 4 Servings
8 slices bacon chopped
1 small onion chopped
3 garlic cloves minced
1 tsp. dried thyme
1 19 oz. can tomatoes
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup fresh parsley chopped
1 pound medium pasta shells [6 c]
In skillet, cook bacon, onion, garlic  thyme,
stirring for 5 to 7 minutes or untill bacon is browned.
spoon off fat.
add tomatoes, salt  pepper; 
bring to boil, breaking up tomatoes with back of spoon.
cook over medium heat for 10 to 12 minutes or until thickened.
stir in parsely.
meanwhile,
in large pot of boiling salted water,
cook pasta for 8 to 10 minutes or until tender but firm;
drain well  return to pot.
add sauce  toss to coat well.

Southern Banana Pudding

Ingredients

3-1/2 tbs. all-purpose flour 
1-1/2 cup sugar 
1/4 tsp. salt 
3 cups milk 
3 eggs yolks, beaten 
1 tsp. vanilla 
5 or 6 bananas, sliced 
1 pkg. vanilla wafers 
3 egg whites, beaten until stiff 
1 tsp. vanilla  
1/4 cup sugar  

Preparation

Mix flour, sugar and salt in saucepan.  Combine beaten egg yolks and 
milk. Stir to mix well.  Add flour mixture  blend well.  Cook over 
medium heat, stirring constantly until thickened  smooth. Remove 
from heat and add 1 teaspoon vanilla.  Place a layer of vanilla 
wafers in bottom of a large casserole dish.  Add a later of sliced 
bananas over wafers.  Top with  cooked custard mixture. Repeat layers 
as needed. Beat egg whites lightly. Gradually add 1/4 cup sugar.  
Beat until stiff. Add 1 teaspoon vanilla. Spread meringue over 
pudding.   Bake at 425 degrees until golden brown.

Travis Tritt and Marty Stuart will reunite this fall for a coast-to-coast 
acoustic tour. Recording and touring together in the early '90s, the duo scored
two Top 10 hits -- This One's Gonna Hurt You (For a Long, Long Time) and the 
Grammy-winning The Whiskey Ain't Workin'. They also won a CMA award for
vocal event of the year for their 1996 single, Honky Tonkin's What I Do Best. 
Tritt and Stuart reunited in March for a performance at the Savannah Music
Festival in Savannah, Ga. With eight dates announced, their tour is currently 
scheduled to kick off Nov. 1 in Temecula, Calif., and end Nov. 21 in Wilmington,
Del. Additional tour dates will be added in the coming months.

George Jones Album of Duets Features Keith Richards, Mark Knopfler

George Jones' previously unreleased duets with Keith Richards, Mark Knopfler, 
Dolly Parton and the late Tammy Wynette will be made available to the public
on Burn Your Playhouse Down, a Bandit Records album set for Aug. 19 release. 
Seven of the tracks are extra songs not included on Jones' The Bradley Barn
Sessions, produced by Brian Ahern and released on MCA Records in 1994. They 
include the collaboration with Knopfler on I Always Get Lucky With You and
with Richards on the title track. In addition to a version of The Window Up 
Above with Leon Russell, the new compilation includes duets with Vince Gill,
Ricky Skaggs, Marty Stuart and Mark Chesnutt from The Bradley Barn Sessions. 
Three of the unreleased tracks are from the sessions for Jones' 1991 Epic
Records album, Friends in High Places, produced by Billy Sherrill. They include 
a collaboration with Parton on Rockin' Years, which she later recorded
with Ricky Van Shelton. Shelby Lynne and Jim Lauderdale are featured on the 
other songs from the Epic project. The unreleased duet by Jones and Wynette

Peter Frampton to Announce Musicians Hall of Fame Inductees
Mon. June 23.2008 5:52 PM EDT

Peter Frampton will announce the newest inductees into the Musicians Hall of 
Fame during a July 1 press conference in Nashville. Frampton, a former Nashville
resident, performed at the 2007 ceremony honoring the first round of inductees 
-- the Nashville A-Team, the Blue Moon Boys (Elvis Presley's original band),
the Funk Brothers (from Detroit), the Memphis Boys, the Tennessee Two (Johnny 
Cash's original band) and the Wrecking Crew (from Los Angeles). This year's
induction ceremony and concert will take place Oct. 28 at the Schermerhorn 
Symphony Center in Nashville. The Musicians Hall of Fame and Museum is located
in downtown Nashville.

I just want to share my sad News, My Guide Dog was put to sleep this 
Morning, he talk me out at 8 15, he went for a Operation at ten this Morning he 
was so full of Cancer they had to put him to sleep.
He was with me right from 16 Months to 11 years of age.
Please Prey for me I am totally lost with out my Best Friend Lex.
I Love you Lex,
Rest In Peace my best Friend.
Thanks Lex for all your help over the Years,
I hope you have lots of fun in Dog Heaven.
Bye Bye Lex I Love You.

i was so sad when i heard the news this morning and i can tell everyone in the 
group i was fortunate enough to know lex.
i used to visit steve and he'd always come and put his head on my knee and 
stand there till i stroked him.
man i'll miss him too visits there will be strange without him.
me and jack are around for you steve always.
If there's anything we can do let us know.
he'll be up there with my dog, hahaha they're having fun together. just think 
of that as comfort.

Baked Beans with Bacon or Sausage   

1-1/2 pounds bulk pork sausage or bacon
1 medium  green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and  beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2  ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces)  black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and  drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and  drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons  ground mustard

In a large skillet, cook sausage over medium heat until no  longer pink, 
or fry bacon until crisp and brown; drain. Add green pepper and  onion; 
saute until tender. Drain. Add remaining ingredients.
Pour into a  greased 13-in. x 9-in. x 2-in. baking dish. Cover and
bake at 325° for 1  hour. Uncover. bake 20-30 minutes longer or until
bubbly. 
Makes 12-16 servings.

today we got a phone call letting us know that my sister-in-law is in the 
hospital.  she had a major stroke.  her bp was something like 260/190 or 
something outragious like that.   supposedly they took her to hospital 
yesterday, but she wouldnt' allow the dr and nurses to check and admit her.  
her grand daughter found her on the floor this morning and she was unresponsive.
please keep us in prayers.

curtis is pretty upset since she was like a second mother to him.  she took 
care of him while he was young and especially after his mom died.

may we strive to do the will of god in all we do in our lives

  APPLE RICE PUDDING   

  3/4 cup rice
  2 cups milk
  4 tablespoons butter
  3/4 cup sugar
  1/2 teaspoon cinnamon
  5 apples

  Wash rice well. In the top of a double boiler, bring milk to a boil. Stir 
in rice and continue to cook until thick, stirring occasionally. Cream together 
butter and sugar; add to rice. Add cinnamon and cool. 
  Peel apples, cut into thick slices, fry pieces in butter until lightly 
browned on both sides. 

  Place cooked rice in an oven proof baking dish, making a depression in 
the center, and fill with fried apple slices. 

  Cover with Meringue and bake at 350°F for 15 minutes or until Meringue is 
lightly browned.

The last paragraph says it all!!
Someone said if people really understood the full extent of the power we have 
available through prayer, we might be speechless. Our prayers are the most
powerful asset we have.

JUST ONE MINUTE EACH NIGHT

This is one of the scariest times in the history pf our nation we have
ever faced and we all need to be on our knees.

Do you believe we can take God at His word? Call upon His name, and then
stand back and watch His wonders to behold. This scripture gives us, as
Christians, ownership of this land and the ability to call upon God to
heal it. I challenge you to do so. We have never been more desperate
than now for God to heal our land.

2 Chronicles 7:14 If my people, which are called by my name, shall
humble themselves, and pray, and seek my face and turn from their wicked
ways, then will I hear from heaven, and will forgive their sin, and will
heal their land.

During WWII, there was an advisor to Churchill who organized a group of
people who dropped what they were doing e very night at a prescribed hour
for one minute to collectively pray for the safety of England, its
people and peace.

This had an amazing effect as bombing stopped. There is now a group of
people organizing the same thing here in America. The United States of
America and our citizens need prayer more than ever !!!

If you would like to participate: each evening at 9:00 PM Eastern Time
(8:00 PM Central, 7:00 PM Mountain, 6:00 PM Pacific), stop whatever you
are doing and spend one minute praying for the safety of the United
States, our troops, our citizens, for peace in the world, the up-coming
election, that the Bible will remain the basis for the laws governing
our land and that Christianity will grow in the U.S.

Summer Fruit Salad  

 
4 cans of cocktail fruit 
1 container of cool whip 
1/2 cup of walnuts or pecans 
2 packages of kool-aid (any flavor cherry or strawberry is best) 
1.  Drain the fruit, then mix fruit and cool whip in bowl. 
2.  Add the nuts and kool-aid and mix.  Refrigerate 30 minutes to  an hour to 
chill and mix the flavors. 
Yield: 6-8 servings 
Comments: Can use fresh fruit also.  This is a yummy, recipe especially  for 
the kids.

  OLD FASHIONED TEA CAKES   

  1 c. shortening
  1 3/4 c. sugar
  2 eggs
  3 c. plain flour, sifted
  Nuts (optional)
  1 tsp. baking powder
  1/2 tsp. salt
  1/2 c. milk
  2 tsp. vanilla (or 1 tsp. each of vanilla and lemon)

  Cream shortening and sugar. Add eggs, one at a time. Sift together flour, 
baking powder, and salt. Add to mixture alternately with milk. Add flavoring 
and nuts. Turn onto floured board and roll out to 1/4 inch thick. Cut and place 
on well greased baking sheet. Bake for 12 to 15 minutes at 350 degrees. Cool on 
brown paper or cake rack.

  ICING:

  1 stick butter
  2 c. sugar
  1/2 c. Pet milk
  1/4 c. cocoa

  Bring to boil and cook 2 1/2 minutes. Add 1 tablespoon vanilla. Put 
between tea cake and make a sandwich type cookie.

Cajun Shrimp Dip
 
 
Recipe from Darren  Grant of Bossier City, La.  
2 large bars of cream cheese softened 
1 half pint size of onion and chive  cream cheese or just chive cream cheese 
(I usually use Philadelphia cream  cheeses)
1/2 medium white onion, grated
3 tablespoons Worcestershire  sauce
1/3 bottle of Tabasco sauce (small bottle)
1/3 tablespoon of ground  red pepper, or to your liking
1/2 cup ketchup. 
1/3 cup  mayonnaise
shrimp 
1.  Add the grated onion, worcestershire, Tabasco, red pepper, ketchup  and 
mayonnaise to the cream cheeses.  Mix all of this with a mixer  till smooth but 
a little chunky.  
2.  Then you add the shrimp and be sure to add these by stirring them  in. 
You can decide on the amount of shrimp to add but make sure they are fully  
cooked and completely peeled including the tail. I usually use about 2 pounds 
of  
medium sized shrimp cut up into dipping size pieces, something that will fit 
on  a cracker. You can add more or less of the spicy items to fit your likings. 
I hope you enjoy! 
This is usually good for a party of 10 people as a dip.
I do double the  spices for us Louisiana folks!

Country Barbecue Chicken Casserole


1 cup all-purpose  flour
1 broiler/fryer chicken (3 to 4 pounds), cut up
2 tablespoons  vegetable oil
1 cup chopped onion
1 cup chopped green pepper
1 cup  thinly sliced celery
1 cup ketchup
1/2 cup water
3 tablespoons brown  sugar
3 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon  pepper

Directions:
Place flour in a large resealable plastic bag. Add  chicken, a few pieces
at a time, and shake to coat. In a large skillet, brown  the chicken in
oil; transfer to an ungreased 13-in. x 9-in. x 2-in. baking  dish.
Drain skillet, reserving 2 tablespoons drippings. In the  drippings,
saute onion, green pepper and celery until tender. In a bowl,  combine
the ketchup, water, brown sugar, Worcestershire sauce, salt and  pepper;
add to vegetables. Bring to a boil. Pour over the chicken.
Cover  and bake at 350° for 30 minutes. Bake
18-20 minutes longer or until chicken  juices run clear.
 Yield: 4-6 servings.

2-Step Inside-Out Chicken Pot Pie 
Try this easy, delicious recipe  from Campbell's Kitchen. 


1 lb. boneless chicken breasts,  cut-up
1 can (10 3/4 oz.) Campbell's Condensed Cream of Chicken Soup
1 bag  (16 oz.) frozen vegetable combination (broccoli, cauliflower,
carrots)
 8 hot biscuits, split

COOK chicken in nonstick skillet until  browned, stirring often.
ADD soup and vegetables. Cover and simmer until  done. Serve on biscuits.

Honey Bun Spice Cake

1 (18.25 ounce) package spice cake mix 
3/4  cup melted butter
4 eggs
1 (8 ounce) container sour cream
1 cup brown  sugar
1 tablespoon ground cinnamon
2 cups confectioners' sugar
4  tablespoons milk
1 tablespoon vanilla extract

Preheat oven to 325  degrees F (165 degrees C).

In a large mixing bowl, combine cake mix,  butter, eggs and sour 
cream. Stir by hand approximately 50 strokes, or until  most large 
lumps are gone. Pour half of the batter into a 9 x 13-inch metal  
baking pan sprayed with cooking spray.

Combine the brown sugar and  cinnamon, and sprinkle over the batter in 
the cake pan. Spoon the other half  of the batter into the cake pan, 
covering the brown sugar and cinnamon.  Swirl the cake with a butter 
knife or icing knife until it looks like a  honey bun.

Bake for 40 minutes, or until a wooden pick inserted into the  center 
of the cake comes out clean. Frost cake while it is still fairly hot.  
Serve warm.

Frosting: In a small bowl, whisk together the  confectioner'Frosting:
milk and vanilla extract until  smooth.

Hot Savannah Chicken Salad Casserole

Two 10 3/4-ounce cans condensed  cream of chicken soup
1 1/2 cups mayonnaise
1 tablespoon prepared  mustard
1 tablespoon Worcestershire sauce
One 10-ounce bag potato chips,  crushed
4 cups cubed cooked chicken
2 cups diced celery
1/4 cup finely  chopped onion
4 hard-boiled eggs, sliced

Lightly butter a 13 x 9 x  2-inch casserole. Stir together the soup, 
mayonnaise, mustard, and  Worcestershire sauce. In a medium bowl, 
reserve 1 cup of the potato chips  for the topping. Place half of the 
remaining potato chips in the casserole,  spreading them evenly. Place half 
each of 
the chicken, 
celery, onion, eggs,  in the casserole, then 
spread half of the soup mixture on top. Repeat the  layers, ending 
with the reserved potato chips. Bake at 350 degrees for  
30 to 40 minutes, or until heated through.

Serves - 8 to  10

2 medium pears
60 gm butter
½ cup castor sugar
1 tspn vanilla essence
1 egg
1¼ cups self-raising flour
½ tspn cinnamon
¼ cup milk
2 tblspn brown sugar 
Grease 20cm round cake pan, line base with paper 
Beat butter, sugar, vanilla essence, then add egg and beat 
Stir in flour, cinnamon and milk (in 2 batches) 
Arrange pear slices overlapping slightly on top, sprinkle with brown
sugar 
Cook at 180°C (355°F) for 40 minutes

Sweet Potato and Tomato Soup 
3 medium sized orange sweet potatoes
1 large brown onion
½ stick celery (or more to suit)
1 medium sized white potato
1 small tin peeled tomatoes, chopped
2 medium sized carrots
2 heaped tsp ground cumin seed 
½ pint (1 cup ) chicken stock or 4 heaped dspn powdered chicken stock 
Peel and cut in small sections sweet potato, onion, white potato and
carrots. Cut in small sections celery and tinned tomatoes. 
Put all into pan and cover with water. Season with salt and pepper. 
Bring to boil, cook gently for 45 minutes until soft. Allow to cool,
then blend. Serve either hot or cold.

White Fish Dish 
1 kg white fish fillets, such as bream 
Marinade
1 teaspoon salt
½ cup lime juice (could use lemon) 
Rub into fish fillets and leave to marinate for at least 3 hours. 
Sauce
¼ cup olive oil
2 cloves garlic
2 onions sliced 
12 tomatoes (can use tinned, discarding the juice and chopping the
tomatoes) 1 tablespoon tomato paste 
1 bay leaf
½ teaspoon oregano (dry)
2 tablespoons capers 
18 olives pitted (green or black depending on your taste) 2 chillies
seeds removed and cut into strips ¼ cup lemon juice 
Saute garlic and onion in olive oil, add tomatoes, tomato paste and
seasonings and cook for about 15 minutes, or until liquid evaporates and
leaves a nice juicy sauce for the fish. 
Put the sauce into a baking dish and place the marinated fish pieces
into the sauce, covering lightly. 
Bake at 325°F (163°C) for 20 to 30 minutes

Creamy Sponge Cake 
225g soft, unsalted butter
225g castor sugar
1 teaspoon vanilla extract
4 large eggs, room temperature
200g self-raising flour
25g cornflour 
1 teaspoon baking powder 3-4 tablespoons milk 
Filling 
2-4 tablespoons strawberry or raspberry jam 1 punnet of strawberries or
raspberries 
12 ml thick cream
1-2 tablespoons castor sugar 
Preheat oven to 180ºC. Line and butter 2 x 21cm deep sided tins. Don't
line tins if they have removable bases. Put all ingredients, except
milk, in food processor. 
Process the batter until smooth. Whilst food processor is pulsing,
gradually add milk until mixture is a soft, dropping consistency. 
Pour batter into tins and bake for about 25 minutes, until the cakes are
coming away from the edges of the tin and when cake springs back after
gently pressing on top of cake with finger. 
Leave cakes in tin on a wire rack for 10 minutes before turning out to
cool completely. Join both cakes together by spreading jam and berries
on the top of one cake. 
Spread whipped cream over the jam and berries and place the second cake
on top of the filling. Sprinkle top of cake with castor sugar

1/3 c. sugar
1/3 c. prepared mustard
1 c. vinegar 
1 1/2 c. juice drained from 1 lg. can pear halves 
Bring sugar, mustard, vinegar and pear juice to boiling point. Pour over
pears. 
Let stand in refrigerator several hours or overnight. 
Place pears around a baked ham or a thick slice of ham.

2 tablespoons water
1/4 cup fat-free egg product or 2 egg whites
1 1/2 cups shredded reduced-fat Cheddar cheese (6 oz)
3 boneless skinless chicken breasts, cut into 1/2-inch pieces
1 1/4 cups Old El Paso® Thick 'n Chunky salsa
1.Heat oven to 400°F. Spray 8- or 9-inch square pan with cooking
Spray. In small bowl, stir together Bisquick® mix, water and egg
Product; spread in pan. Sprinkle with 1 1/4 cups of the cheese.2.In
10-inch nonstick skillet, cook chicken over medium-high heat, stirring
Frequently, until outsides turn white; drain. Stir in salsa; heat until

Copycat Cheesecake Factory Oreo Cheesecake
Here is a great copycat recipe for anyone with a sweet tooth! This
recipe takes oreo’s to the next level like only The Cheesecake
Factory can do. With this simple recipe, you can prepare this cheesecake
at home like a pro!
Ingredients
Filling
1 1/2 pound cream cheese
1 cup sugar
5 large eggs
1/4 teaspoon salt
2 teaspoon vanilla
1/4 cup flour
8 ounces sour cream
5 Oreo cookies (coarsely chopped for the batter)
10 coarsely chopped Oreo cookies for the topping
Crust
1 1/2 cup Oreo cookie crumbs (about 25 Oreo cookies finely chopped)
2 tablespoon melted butter
9″ spring form pan (buttered on bottom and sides)
1. Mix melted butter with Oreo crumbs and press in the bottom of the
spring pan and 1 1/2″ up the sides, set aside.
2.All Ingredients must be at room temperature before beginning. Beat
cream cheese with a mixer on low until fluffy.
3. Slowly add sugar and continue beating cream cheese until mixed well.
4. Add eggs one at a time and continue to beat until blended.
5. Measure the vanilla, salt and flour, pour into cream cheese and egg
mixture and beat until smooth. Add the sour cream and beat.
6. Stir in the coarsely chopped oreo cookies with a spoon.
7. Pour cream cheese into the spring pan and place the nine coarsely
chopped Oreo Cookies on to of the cream mixture.
8. Place pan on the top rack and in the middle of a preheated oven at
325 degrees F and bake for one hour and 15 minutes.
9.After that time, keep oven door open and let the cheese cake stay in
the oven for one hour. Remove from oven and let cool enough to place in
the refrigerator for 24 hours.
Serves 4-6

6 to 8 servings
4 c. Cubed frozen hash brown potatoes, thawed
1/2 c. Chopped celery
1/2 c. Chopped green pepper
1/3 c. Butter or margarine, melted
2 Tbsp. Finely chopped onion
1 Tbsp. Minced fresh parsley
1 t. Salt
Combine all ingredients. Place on a double thickness of heavy-duty foil
(about 28x18 inches). Fold foil around the potato mixture and seal
tightly.
Grill, covered, over medium heat for 45 to 50 minutes or until the
potatoes are tender.

Pecan Sandy Dessert 
1 sack Pecan Sandies
1/4 Cup softened margarine
2 Packages instant vanilla pudding
2 Cups milk
1 qt. Butter pecan ice cream, softened
8 oz. Cool Whip
Crush all the Pecan Sandies (save a little to sprinkle on top) and mix
with 1/4 cup softened margarine. Spread into 9 x 13-inch pan or a little
larger, if available. Beat until thick, pudding, milk (fold in or beat
in) and butter pecan ice cream. Pour on top of Sandy spread. Top with
Cool Whip. Sprinkle with remaining cookie mixture or 4 large crushed
Heath bars. Refrigerate but do not freeze.

Vermont Maple Cookies
(originally found in an old Workbasket magazine)
1/2 cup butter or margarine
1/2 cup maple syrup
1/2 cup nut meats
1 egg, beaten
1/2 cup chocolate chips
1-1/4 cups all purpose flour
1/2 to. Baking soda
1/2 tsp. Salt.
Mix butter and maple syrup into the beaten egg. Stir in Chocolate chips
and nut meats. Sift together flour, soda and salt and add to mixture.
Drop by tsp. Onto gread pan. Bake at 325 degrees F. For 8 to 10 minutes.
I think I will try to use sugar free maple syrup  egg beaters so I can
call them diabetic cookies. One will be enough . Everything in
moderation

  1 lg. box instant vanilla pudding
  1 can crushed pineapple
  1 can fruit cocktail
  1 can mandarin oranges
  Banana, sliced

  Drain fruit. Mix pudding according to package directions using fruit 
juice instead of milk. Add fruit and chill. This makes a very refreshing and

  1/2 c. sugar
  1/2 c. Crisco
  1 egg
  2 c. flour
  1 tsp. soda
  1 tsp. vanilla
  1/4 tsp. salt
  1 c. sour milk or buttermilk

  Mix sugar and rhubarb; let stand. Combine rest of ingredients into a 
bowl. Mix in rhubarb and sugar. Pour into greased 9 x 13 pan. Spread with 
topping: 1/4 c. melted butter 1/4 c. coconut 1/4 c. chopped nuts

  PREACHER'S DELIGHT (PINTO BEANS)   

  2 lbs. pinto beans
  1 tsp. salt
  1 tsp. pepper
  3 cut up pork chops
  3-4 carrots

  Look and wash pinto beans. Slow cook on medium heat pinto beans. Add 
salt, pepper and pork chops. After 3 hours add 3-4 halved carrots. Cook an 
additional hour or until done. Dispose of carrots, as their purpose is to 
collect acid from the beans. Enjoy with biscuits or cornbread.

Grilled Corn on the Cob

METHOD: Grill (gas or  charcoal)
TIME: Prep: 20 min. + soaking Grill: 25 min. 
Ingredients: 
8 medium ears sweet corn
1/2 cup butter, softened
1/2  teaspoon salt and pepper 
Directions: 
Soak corn in cold water for 20 minutes. Meanwhile, in a small  bowl, combine 
the butter, pepper and salt. Carefully peel back corn husks  to within 1 in. 
of bottoms; remove silk. Spread butter mixture over corn.  
Rewrap corn in husks and secure with kitchen string.  Grill corn, covered, 
over medium heat for 25-30 minutes or until tender, turning  occasionally. Cut 
strings and peel back husks. Yield: 8 servings.

  PASTA WHEELS IN A SWEET-SOUR SALAD   

  1 (8 oz.) box pasta wheels (rotelle)
  1 purple onion (Bermuda) if large use half
  1/2 c. red or green pepper
  2 stalks celery
  2 carrots
  4 tbsp. chopped chives
  2 tbsp. chopped parsley
  1/2 c. olive oil
  2 tbsp. white vinegar
  1 tsp. sugar
  1/2 c. mayonnaise
  1 c. sour cream
  2 tsp. salt
  Freshly ground pepper

  In medium pot, cook the pasta for 5 or 6 minutes or until done. Drain 
well in strainer or colander to be sure most water is removed. Transfer the 
pasta to a large bowl and add onion, green or red pepper, celery, carrot, 
chives and parsley. Set aside. 
  In medium bowl, combine olive oil, vinegar, sugar, mayonnaise, sour 
cream, salt and pepper. With wire whisk, beat hard until very creamy. Pour over 
pasta salad with foil and refrigerate for a few hours for the flavors to blend.

  HOT PASTA SALAD   

  1/2 lb. rotini
  1/2 c. celery, chopped fine
  1/3 c. red bell pepper, chopped fine
  1 med. tomato, seeded and chopped
  1/4 c. chopped ripe olives (optional)
  1 c. sour cream
  1/2 c. grated Parmesan or romano
  3 tbsp. chopped chives or green onion

  Cook pasta al dente. Drain and place in large, preheated serving bowl. 
Add all remaining ingredients and mix, adding more sour cream if necessary to 
creamy consistency. Add more cheese to taste. Place in oven 10 minutes on low 
heat or in microwave for a few minutes to bring to serving temperature. Recipe 
is easily doubled for larger crowds. Add a little milk to leftovers to re-heat 
in microwave.

  1 c. cold milk
  1/2 pt. sour cream
  1/4 tsp. almond extract
  1 pkg. (4 serving size) vanilla instant pudding and pie filling
  1 c. canned cherry pie filling

  Combine first 3 items in a bowl. Add pudding mix. Blend well with an 
electric mixer at low speed for 1 to 2 minutes. Layer pudding and cherry pie 
filling in individual parfait glasses. Chill about one hour. Garnish each

  VANILLA CREAM DESSERT   

  1 c. flour
  1/2 c. chopped pecans
  1/2 c. shortening

  Mix together and press into 9 x 13 cake pan. Bake 15 minutes at 375 
degrees. Cool.

  LAYER 1:
  1 (8 oz.) pkg. cream cheese
  1 c. powdered sugar
  1 c. Cool Whip

  Mix cream cheese and sugar. Add Cool Whip. Spread over crust.

  LAYER 2:
  2 pkg. vanilla pudding, regular or instant
  2 1/2 c. milk

  Prepare pudding and spread over last layer. Top with remaining Cool Whip 
from 1 quart container. Chill in refrigerator.

  1 pkg. (21 oz.) brownie mix
  1/2 c. peanut butter
  1 1/2 c. cold milk
  1 pkg. (4 serving) chocolate instant pudding mix
  1 c. frozen non dairy whipped topping (thawed)
  1/4 c. chopped nuts, if desired
  Chocolate syrup, if desired

  Prepare brownie mix as directed on package. Bake in greased 12 inch pizza 
pan at 350 degrees for 25 minutes. Cool in pan. Transfer to serving platter. 
Spread peanut butter over brownie base. Pour milk into shaker cup. Add pudding 
mix, shake vigorously, covered 1 minute. Let stand until slightly thickened. 
Pour pudding over brownie. Spread with whipped topping. Refrigerate at least 1 
hour.

  2 tbsp. poppy seeds

  Whisk last 5 ingredients together. Dressing makes enough for 2 salads.

  8 oz. softened cream cheese
  2 tbsp. milk
  2 tbsp. sugar

  Combine until smooth; spread on pie crust.

  2 pt. sliced  1 pt. mashed fresh strawberries
  2 tbsp. (each) lemon juice, cornstarch
  1/4 c. sugar

  Place sliced berries on cream cheese mixture, cut-side up. Mix mashed 
berries with lemon juice, cornstarch and sugar; cook over medium-high heat 
until mixture boils and begins to thicken, stirring constantly. Cool and pour 
into pie shell; refrigerate 4 to 6 hours.

  1 qt. fresh blackberries
  Sugar
  1 tbsp. cornstarch
  2 c. water

  Wash and cook blackberries with water and sugar added to reach desired 
sweetness. Cook until berries are done. Dissolve cornstarch in 2 tablespoons 
water and add to berries. Cook about 3 to 5 minutes.

  DUMPLINGS:

  1 1/2 c. biscuit mix
  1/2 c. flour
  1 egg
  1/4 c. sugar
  Water

  Mix ingredients together in a bowl, adding as little water as possible to 
blend. Dough must be thick. Drop into hot berries by table-spoonful. Cook on 
low heat turning dumplings over in sauce. Cook until dumplings are done.

  1 c. Bisquick baking mix
  1/3 c. milk
  1 tbsp. brown sugar
  1 tbsp. soft butter
  1/4 tsp. nutmeg
  1 (17 oz.) can apricot halves
  Ice cream

  Heat oven to 400 degrees. Mix all ingredients except apricot halves and 
ice cream with fork to a soft dough. Spread in ungreased 8x8x2 inch baking pan. 
Pour apricots (with syrup) over batter. Bake 25 to 30 minutes. Serve warm with

Hi, Steve, Oh, my heart aches and breaks for you. How sad! No matter if a 
guide dog or family pet, they always become such an integral part of our 
lives. Just last Friday, the 13th, Mom suddenly lost her little chihuahua, 
Luckie. She was 8 and laid down behind mom's lift chair, never to awaken. 
Guess her sweet little heart gave out; we all are devastated over it; Mom is 
90 now, and the sad thing is how strangers watch homes and case them over, 
and know now no more little Luckie. This Saturday morning, a man got into 
her house, it could have been a sexual assault, but she begged him not to 
hurt her and said she was crippled, and she has a Cross hanging over her 
bed, and he must have seen it, and just left! God was with her. I will be 
praying for you. Luckie and Lex are together watching over us, and all my 
three special sweeties.

[RecipesAndMore] Cajun Smothered Pork Chops

Cajun Smothered Pork Chops
 
3 lbs of pork steak and fixings 4-6 pork chops (2-3 pork steaks) 
(2.5-3  lbs.)
Cajun/Creole seasoning
Cooking oil
1 pound  smoked sausage (chicken or pork)
Two medium onions (roughly  diced)
1-2 bell peppers (roughly diced)
¾ cup celery  (chopped)
4-6 cloves garlic (chopped)
3 tablespoons  butter
1 tablespoons of tomato paste
2 cups Vegetable stock (or  water)
3-4 cups rice Season  pork with Cajun/Creole seasoning.  Brown pork chops in 
oil. Remove pork  chops and add cut up vegetables and some water to pan to 
deglaze.  Add  butter to vegetables, and add cut up sausage, and sweat/sauté 
for 
about 8-10  minutes.  Put pork chops back into pan with vegetables, mix 
vegetables, and  sausage on and under pork chops and add two cups of vegetable 
stock.   Reduce heat to simmer and put lid on pan.  Simmer, stirring 
occasionally,  
for about 1.5 hours (meat will become ultra tender).  You may add liquid as  
necessary to thin the gravy that is created: taste for seasoning.  You may  
mix some cornstarch in water to thicken the gravy if you like.  Prior to  
serving, cook 3 or 4 cups of rice.  Serve individual pork chops over  rice.  It 
is 
best to use something other than non-stick cookware for this  recipe.

A preferred and  time honored brand of pots and pans in Cajun Country and 
beyond.  Still  available.  Essentially a heavy alluminum  cookware.  A key in  
Cajun cooking is often making sure that you do not use non-stick.  The  
crisping and browning that happens on the bottom of a pan (and that does not  
happen 
in a non-stick) is part of the flavor profile that develops in Cajun  cooking 
(any real cooking for that matter).
 I still have my skillet and dutch oven  pot that I still use.

Creamy Fried Tomatoes

6 large, ripe tomatoes
1 Tbsp.  flour
3/4 tsp. salt
1/8 tsp. pepper
1/4 cup butter
2 Tbsps.  flour
1 1/2 cup milk
3/4 tsp. salt
1 1/2 tsp. sugar
3/4 tsp. thick  steak sauce
1 1/2 tsp. prepared mustard

Cut off top and bottom of the  tomatoes then half tomatoes crosswise. Combine 
1 Tbsp. flour, 3/4 tsp. salt, and  pepper; sprinkle over tomato halves. Melt 
the butter in a skillet, saute  tomatoes until barely tender. Place 10 halves 
on a heated platter. Mash the two  halves left in the skillet and remove the 
skins. Stir in the 2 Tbsps. of flour,  then the milk and the rest of the 
ingredients. Cook slowly until creamy and pour  over the tomatoes.
serves 5
