[RecipesAndMore] Potato Salad With Peas
Potato Salad With Peas 2 pounds red-skinned potatoes, peeled, cut in 1/2-inch chunks 1 teaspoon salt 2 hard-boiled eggs, peeled and chopped 1 cup fresh or frozen peas, cooked, drained 1/2 cup finely chopped red onion 2/3 to 1 cup mayonnaise, as desired 1 tablespoon sour cream, optional 2 to 3 teaspoons prepared mustard, or to taste salt and freshly ground black pepper, to taste Put potatoes in a saucepan and cover with water; add 1 teaspoon salt. Bring to a boil. Cover and cook for 15 to 20 minutes, just until tender. Drain and transfer to a bowl; add chopped eggs, peas, and onion. Cover and refrigerate until chilled. In a cup or bowl, combine 2/3 cup mayonnaise, sour cream, and mustard. Gently stir into the potato mixture until blended. Add more mayonnaise, if desired. Taste and add salt and pepper to taste. Green Bean and Potato Salad 1 1/2 pounds fresh green beans, trimmed and cut in half crosswise 6 small red potatoes, cubed 1 small purple onion, halved lenghthwise and thinly sliced 1/4 cup vegetable oil 1/4 cup red wine vinegar or garlic red wine vinegar 1/4 cup seasoned rice vinegar 1 teaspoon garlic powder 1 teaspoon salt 1 1/2 teaspoons seasoned pepper 1 teaspoon sugar Preparation: In large pot of boiling water, cook prepared green beans for about 7 minutes or until crisp-tender. Drain and immerse in ice water for 5 minutes to stop cooking process. Completely cool and drain well. In large pot of boiling water, cook potatoes until tender. Repeat cooling procedure with potatoes. Place beans in large serving bowl. Add potatoes and onion. In small bowl, whisk together oil, vinegars, garlic salt, seasoned pepper and sugar. Pour dressing over vegetables; toss gently to coat. Cover and refrigerate 2 hours, stirring or tossing a few times while chilling. Remove salad from refrigerator about 30 minutes before serving; toss just before serving. Taste and adjust seasonings. Makes 6 servings. A single candle can illuminate an entire room. Red Potato Salad With Sour Cream and Dill 2 pounds small red potatoes, scrubbed 3 to 4 eggs, hard-cooked and diced 2 ribs celery, diced 1/2 cup diced red onion 4 green onions, thinly sliced 2 tablespoons diced dill pickle 3/4 cup mayonnaise 1/4 cup sour cream 1 tablespoon tarragon vinegar 1 teaspoon Dijon mustard 1 tablespoon freeze dried or fresh dill, or about 2 teaspoon dried dill 1/2 teaspoon salt 1/8 teaspoon pepper Cut the potatoes into small, bite-size chunks and place in a medium saucepan. Cover with water and boil for about 10 to 12 minutes, until just tender. Pour off water, set the pan in a sink or larger pan of cold water to cool the potatoes quickly. In a large bowl, combine the potatoes with eggs, celery, red onion, green onions, and diced dill pickle. In another bowl, combine the sour cream, mayonnaise, vinegar, and Dijon mustard. Red Potato Salad 3 pounds small red potatoes 2 large ribs celery, thinly sliced 1 cup mayonnaise, or to taste 1/2 cup milk 2 tablespoons white vinegar 2 tablespoons minced purple onion or sweet onion 2 teaspoons salt 1 teaspoon granulated sugar 1/4 teaspoon coarsely ground black pepper Place whole unpeeled potatoes in a large saucepan or Dutch oven. Cover with water. Cover pan and bring to a boil. Simmer for 25 to 30 minutes, or until potatoes can be pierced easily with a fork. Drain and let cool until easy to handle. Cut unpeeled potatoes into halves or quarters, depending on size of potatoes. Chunks should be no larger than 1 inch. In a large bowl, combine potatoes with celery and remaining ingredients. Toss to blend. Cover and refrigerate until serving time. Serves 6 to 8. Picnic Potato Salad 3 pounds potatoes, cooked until just tender, cubed, cooled 5 or 6 hard cooked eggs, cooled, coarsely chopped 1/4 to 1/2 cup chopped red onion 1/4 to 1/2 cup chopped celery, optional thinly sliced tomatoes and cucumber, for garnish, optional . Dressing: 3/4 cup mayonnaise (a little more or less, as desired) 1 to 2 tablespoons prepared mustard salt and pepper to taste Combine potatoes, egg, onions, and celery. Stir in mayonnaise, mustard, and salt and pepper to taste. (Stir the mayonnaise and mustard in a little at a time, until you have the flavor and consistency you like.) Top with thinly sliced tomatoes and cucumber, if desired. Serves 6 to 8. Classic Potato Salad 1 cup mayonnaise 2 tablespoons vinegar 1 1/2 teaspoons salt 1/8 teaspoon pepper, or to taste 1 teaspoon sugar 5 to 6 med. potatoes, about 1 1/2 to 2 pounds, peeled, cubed, cooked 1 cup thinly sliced celery 1/2 cup chopped onion 3 eggs, hard-boiled 1 to 2 Tbs chopped green onions, optional garnish 1 tomato, cut in wedges, optional garnish Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Sour Cream Potato Salad 4 to 5 cups cooked diced potatoes 1/2 medium cucumber, peeled and diced, about 1/2 cup 1/4 cup finely chopped celery 1 tablespoon finely chopped onion 1 1/4 teaspoons salt 3/4 teaspoon celery seed 1/4 teaspoon ground black pepper 1 cup sour cream 1/2 cup mayonnaise 1/4 cup vinegar 1 teaspoon prepared mustard 3 hard-cooked eggs In a large bowl, combine potatoes, cucumber, celery, onion, salt, celery seed, and pepper. In a separate container combine sour cream, mayonnaise, vinegar, and mustard. Dice egg whites; add to the potatoes. Mash the yolks and stir into the sour cream and mayonnaise mixture. Cover and refrigerate both containers if making early in the day. Mix all ingredients together about 30 minutes before serving. Sour Cream Potato Salad serves 6. Add remaining ingredients; mix well. Cover, chill. Makes 5 1/2 cups. Approximately 5 medium potatoes make 5 cups of cubed potatoes. Mayonnaise Potato Salad 5 pounds red potatoes 1 medium onion, chopped ¼th (or more) of a green pepper, chopped 3 stalks of celery and some the hearts and leaves, chopped 3-4 hard boiled eggs, chopped 2-3 tablespoons Hellmanns or Best Foods Mayonnaise 2-3 tablespoons Miracle Whip Salad Dressing 1 tablespoon Sweet pickle juice, or to taste 1 tablespoon Sweet pickle relish , or to taste 2 tablespoons chopped fresh parsley 3-4 hard boiled eggs, chopped Salt and pepper to taste Boil potatoes. When cool enough to handle, peel and cube. Add onion, green pepper, and celery. Add chopped parsley and salt and pepper. Add pickle juice and pickle relish. Starting with 1 tablespoon each, lightly mix in the mayonnaise and salad dressing until potato salad is of desired consistency and taste. Gently mix in hard boiled eggs. Mix well. Worcestershire sauce 1 tsp. black pepper 2 lg. onions 1 toe garlic 2 tbsp. chili powder 1/2 tsp. red pepper 1 1/2 tsp. ground allspice 1 (6 oz.) can tomato paste 1 1/2 tbsp. cider vinegar 3 lg. whole bay leaves Crumble hamburger (raw) into water. Add all ingredients. Bring to a boil, then let simmer 3 hours. Remove garlic toe and bay leaves. Serve over spaghetti or hot dogs. 2 way over spaghetti, 3 way add cheese, 4 way add onions, 5 way add kidney beans. OHIO CHICKEN SUPREME 1 pkg. corn meal stuffing 1 can cream of chicken soup 1 c. sour cream 1/3 c. onion, chopped (optional) 3-4 c. cooked chicken or turkey, diced 1 stick butter, melted 1 3/4 c. chicken broth Mix dry stuffing and butter. Place half of mixture in bottom of 9x13 inch pan. Combine chicken, sour cream, soup and onion in bowl. Spread over dressing in pan. Spread remaining half of dressing on top of chicken mixture. Pour broth over top. Cover and bake at 350 degrees for 30 minutes. Remove cover and bake additional 15 minutes or until browned. Spread on chicken. Add nuts, pour cream around chicken. Bake uncovered at 350 degrees for 1/2 hour. Mix in sour cream and serve. EASY LASAGNA A LA OHIO 1 to 2 lb. ground beef 1 med. onion, chopped (optional) 1 sm. can tomato paste 1 lg. can tomato sauce 1 sauce can of water 1 pkg. spaghetti mix 1 lb. carton cottage cheese 2 (8 oz.) pkg. cream cheese 1 pkg. lasagna noodles Saute ground beef and onion in skillet until meat is brown. Pour off fat. Add tomato paste, tomato sauce, water and spaghetti mix; mix well to combine sauce. In small mixing bowl, stir together cottage cheese and cream cheese, set aside. Prepare noodles according to package directions, drain. Layer a small amount of sauce in bottom of large baking dish, add 1/3 of noodles, 1/3 of sauce and 1/3 of cheese mixture. Repeat layers twice ending with noodles and cheese. Bake at 350 degrees for 20 minutes until bubbly. OHIO DREAM CAKE 1 Duncan Hines butter cake (dry) 1 can mandarin oranges (do not drain) 4 eggs 1/4 c. oil Mix well and pour into 4 round cake pans. This will be thin. Bake 30-35 minutes or until toothpick inserted into middle comes out clean at 375 degrees. Let cool before frosting. FROSTING: 1 lg. Cool Whip 1 lg. instant pineapple pudding (dry) 1 lg. crushed pineapple (do not drain) Mix and frost. Just try handing a mustard-and-sauerkraut dog to someone who takes ketchup and onions, and you'll see what I mean. Passion begets consumption, and Americans spend over $1.5 billion on store-bought hot dogs each year. To determine which all-beef hot dog is best, we bought nine brands at our local supermarket and headed into the test kitchen to cook and taste them. VICTORIA'S BEEF BARLEY SOUP 1 - 2 pound chuck steak, or stew beef, cut into small cubes 4 quart water 2 tablespoon beef bouillon 1 large onion, chopped fine 3 medium carrots, chopped into little squares 5 stalks celery, chopped fine 1/2 cup pot (pearl) barley 2 tablespoon chopped garlic 1/8 teaspoon cayenne In a large Dutch oven, add water, cubed beef, garlic, and cayenne. Bring to boil. Lower heat to simmer and allow to cook until meat is tender (can take a couple of hours). Bring back to boil, add barley, and while it is cooking, chop up the onion, celery and carrots. After adding the vegetables, lower heat to medium and allow to cook for about 20- 30 minutes until barley starts to swell. Lower heat to simmer, and continue cooking for another 20-30 minutes, until barley is tender. Serve immediately, or can be frozen for up to 3 months. VERSE: If my people, who are called by my name, will humble themselves and pray and seek my face and turn from their wicked ways, then will I hear from heaven and will forgive their sin and will heal their land. -- 2 Chronicles 7:14 THOUGHT: In today's Scripture, which occurs immediately after the dedication of the Temple, God told Solomon that the Temple would be a place his people could come and be assured that their prayers would be heard if they honestly and humbly would seek God. This promise is true still, to this very day, for while God's physical Temple isn't standing, his spiritual one is found in the gathering of his people (cf. 1 Cor. 3:16; Matt. 18:20). While we know that God hears our individual prayers, what a great blessing and what a powerful promise for God's people today! We know that when we gather with believers and humble ourselves before God and seek his presence he will hear us. Rather than wait for a grandiose, world-wide effort to start, why not get together regularly with others who will join us in this prayer effort? PRAYER: Loving Father, earnestly I seek your presence now. Please forgive me for my sin. Please use me to be an influence for good in my time. Most of all, Father, please move to bring revival and healing to our time, our people, and our land. We desperately need your guidance, blessing, and character in our government and among our people. I know what you mean and we can start writing off list if you would like. This weekend is not very good because so many things are just crazy around here. We lost Sam on Thursday, my brother has been in the hospital since Wednesday, and this past day, Friday, my son and husband spent over 8 hours tearing and rebuilding the computer system in here because the table started to collapse in the middle. That was scary. I hope this coming day besides being a holiday is a quiet and very unexciting day where nothing major will happen. But I look forward to corresponding with you.
