Open the document in Word.
Choose the, Save as Option.
Alt, F and then A
You will be in the edit field for your file name.
You don't need to change anything here.
Tab once and you will find a list of file types you can save as.
Arrow down the list until you find txt,
Enter, and then Enter again
You might try opening the document with Word rather than notepad, and see if
you have a better document to work with.
Then you can copy and paste from one Word document to another.

When I open my google mail account I can find the inbox.

There may be a simpler way, but this is how I do it.
open the address book
Find the contact.
Press the applications key.
Choose Properties.
This displays the contact information.
Then I tab to the email address
Use control A to highlight
Control C to copy
Then go paste it where you want it.
I understand that someone may be able to interpret a captcha for me.
But it seems to me that when I run into a captcha, I need someone right
there to look at it.
If I send it in for interpretation, and then come back to it, it will be a
different one the next time.

I assume you want to use mail merge to insert data from a database
If you want just a page of all the same labels, you can use Alt M, then l to
get into the labels dialogue box and check the appropriate radio button.
If you want to mail merge, here is an outline for that.

Note that in Outlook 2007 there are a couple of radio buttons that are
important.
Open the address book and tab around until you find one of two options:
Name Only
More Columns.
If the radio button for, More Columns is checked, you will not see any names
displayed.
Arrow to the Names only radio
The way I do it, it is as simple as copying files and folders.
I use Windows Explorer to highlight the folders and files I want to copy.
You could just highlight the, My Documents folder.
Alt C, to copy
Then open the external drive and paste the files there, Alt V.
Then sit back and wait while

To convert a PDF into Word, I simply copy and paste the text into a
Word document.
With a PDF open in Adobe, Alt E brings you to the edit menu, and B
copies all the text to the clipboard.
Open a new Word file and paste, using Control V

It is possible to buy a multi license copy, but that is still likely to

But I think the auto correct feature in Word allows you to enter your
common misspellings, and hav Word automatically correct them each time.

One involved copying from web pages.
There's asetting that will copy just text, and not all the graphics off
the web page, so that I get just the text in my word processor document.

I'm using Office 2007, especially Word, and some Excell and a little
Access.
I find it works very well with JAWS 9.
If you are going to use Office 2007, you'd be best off with JAWS 9,
rather than an earlier version of JAWS.
JAWS 10 will help with that too when it comes out.
Some key strokes are
I've been using JAWS 9 with Office 2007 for all of 2008, and find it
works very well.
You will have a learning curve as you figure out how to access the ribbon
menus, but give yourself some time to explore and you will do fine.
I am very happy with both JAWS and Office 2009.
