Mostly by date, but some things we keep no matter how old they get.

At one point there were a lot of questions about them keeping all the 
emails forever; they specifically say they don't ever delete them.  
It's not a matter of stuff being found in pieces on the server; it's 
that they'll always have every email, identifiable, with your account 
attached to it; they just don't show them to you in views once they're 
marked as deleted.
