For example, I want to check my gmail account from Thunderbird, Outlook, and/or Evolution on OS X, Linux, and/or Windows. If it's IMAP, then my changes are reflected across all of these clients I'm checking from different locations. With gmail, if I send an email, the only way that I can see that sent email is to log on gmail.com and look through my sent folder.
