You seem to have already followed the correct method for changing file 
associations via
Explorer>Tools>Folder Options>File Types.  Each of the programs listed will 
display their own
individual icons and it is really up to you to choose which program you wish to 
be associated with a
particular file type. When you scroll down and click Edit on a particular file 
type I think there is
even an option to change the icon if you don't prefer the program's default 
icon and of course you
can turn off image preview there also.  I think the default settings were MS 
Paint for bmp, MS
Imager for jpg and Internet Explorer for gif files but not certain about that.

If you work with graphics you probably open all these file types in the same 
program to edit them?
If so why not associate all these file types with the program you use but 
select a different icon
using the "change icon" button mentioned above (if it is available in ME).  The 
other option is to
show the file extension Explorer>Tools>Folder Options>View and uncheck "Hide 
file extensions", then
you will be able to distinguish the files by their extensions .jpg, .bmp, .gif, 
etc.

As for deleting Photo Editor, can't you do it by Add/ Remove programs?  If not 
try

Start>Programs>Accessories>System Tools>Disk Cleanup and under the More Options 
tab there should be
an option to remove Windows programs not in use and another option to remove 
other programs you do
not use.

Can anybody at all help or have any ideas or a guide or something

I'm trying to change the File Type icons back to the default gif, jpg
and png icons rather than the Image Preview icon it keeps showing. I
work with graphics and without the right icons showing (and for some
reason the image preview that should be displayed in the folder when
you click an image) it makes it much much harder to find the correct
file types I need to work with.
