Hi;

Confused at your initial request and now these comments / observations as to what you want and/or will miss.  Proxmox is a very cable solution for what you may want to use it for.  However, it may not be that forgiving if you have not planned your virtualization farm properly in the beginning.

A critical thing to consider if you're looking to do live migrations and the like is the storage options available.  Each has its advantages and can do a wealth of stuff.  However, the more you wish to do live migrations and stuff like that, the more you're going to need to use either one of the OpenSource storage clustering types e.g. the GlusterFS and Ceph storage types.  Or, use the ZFS file system.  In other words, you will need to pick a storage type that supports the shared attribute which will then give you the flexibility and capability of doing live migrations.

If you are going to do a cluster farm for their PVE (Proxmox Virtual Environment), then you will need to think about quorums (odd amount of servers in the farm) and have a separate network. And if you have the storage cluster, then it's recommended that this too also have their own network.  A caveat is that you can't (or rather you should not) start to build your PVE cluster with already provisioned PVE servers.  Hence have a plan before diving in.

For backups, you can now use their Proxmox Backup server.  It's a separate Proxmox server that is tightly integrated into the PVE. Or, you can use a commercial product such StorWare VProtect.  They give you a 10 server user license for free. Bacula can also work. But the licensing cost is expensive.  BareOS may offer a better pricing (if you need support etc.)

Proper planning will lead to great results for which Proxmox can most likely deliver the alternative you are seeking.

If you're going beyond 32 physical host servers (or PVE servers) and wish to manage all using a single pane of glass concept, then this may be an issue and/or limitation.

When was it added?  From what I've been told its buggy and not as fluid and painless as vmware.  I can migrate both hosts and datastores at the same time LIVE while a machine is running.  Does Proxmox have DRS?

Proxmox has both of these featues.   Plus with a ceph backend storage migration should become less of an issue as you effectively mirror drives across cluster nodes.

You can use it for 100000 servers.  But it still won't do certain
things that make managing all of them easy.

    Strange.
Friends of mine have used Proxmox in installations where there
were many, many racks full of servers.

Here is the alternative I was looking at.  Since Xen didn't do
paravirtual before but it does now.

    https://xcp-ng.org/

Proxmox too many things its missing to list here.  Its great for
basic usage 2-3 servers definitely.  I'd use it in a heartbeat if
    I was a small operation.

What features is Proxmox missing that vSphere has (and you need\use)?
Proxmox also has a backup server now, though I haven't really
    looked at it.

Oh the combo.. couldn't help you there :)  Proxmox looks cool..
but still doesn't have the features Vmware does. But I hear now
there is some pretty good xen material out there now.  It has
advanced much further than it used to be.  Trying to find the link
but the manager you need to pay for but its a fraction of Vmware.

Ive been running vmware and veeam forever, i love it, but we are
getting priced out of continuing to use it. upgrading either is
    always a cumbersome task.
Having been using what is probably the simplest
virtualization/backup combo out there I'm guessing anything we
move to will have a massive learning curve for me,

What combos are out there that dont break the bank and are
    reliable as this?
