Jay, There is a very nice document on channel planning on the EPMP site (same place where they have firmware).
It discusses the different issues with sync and channel planning. The issue in your case is not so much the AP to AP potential interference (sync makes sure that all AP's tx at the same time, as long as the BW ratios are the same on the AP's). The issue will be more ..can the CPE Hear both AP's at the same time ?, There needs to be channel separation so that when the CPE hears AP1, it is not hearing AP2 on the same channel as interference..
