IIRC, the IIc, IIc+, and IIe all normally had composite video out (looks a lot like an RCA-type phono plug). You can use a lot of monitors with that - can even use a color TV if you go to your local Radio Shack/WalMart and get an RF modulator to go between the cable from the computer, and the TV.
There was/is an Apple IIe Color Monitor (I have one with my IIe) which will work (and was the main Apple-branded color monitor Apple sold, though Apple dealerships often sold other brands as well).
