There isnt really a way even if you go down to the data dictionary to check the create dates of a field.
 
What you could however do is try and study the trend used by those admins to create new fields - maybe they used a particular range of ID's that you could search for... If they were good admins/developers that did these changes, they ought to have followed the basic principal of creating fields within a range of ID's..
