Even though that is true the timestamp is updated every time a field is modified, one should keep in mind that the Field ID number for the user space (that is the fields added by an admin) start with 536870913. A good admin will keep all added fields above this number and sometimes in a particular sequence. I added fields for one project starting with 536871100.

Timestamp column in the field table keeps the last changed date, so if you have made even so much as a field label modification to the OTB fields, the timestamp in that field gets modified...

I have inherited a legacy application that was modified by a previous
admin, and I was wondering if there was a way to determine what fields
were added to the form after a certain date. There is little or no
documentation created by the previous admin on modifications made to the
form.
