To use the MAPI protocol in the Email Engine you have to run the Email Engine 
in a 32 bit Java   
    From the Compatibility matrix   
        Known Incompatibilities for Java   
           1. When running in a 64 bit JVM, the Email Engine cannot support the 
MAPI protocol.   

So you installed a 32 bit Java on the sever, created the 32 bit mail profile in 
32 bit Outlook on the server for the user the Email Engine runs under, and 
edited the emailstart.bat file to point to the 32 bit java?
