I have done it before, it's possible, but might cause problems of 
course. Check http://people.debian.org/~osamu/downgrade.html for example.

Alternatively you could copy stuff you need, such as /etc /home /opt to 
a safe place. Reinstall debian, but now stable, and recreate your 
configuration from the copied /etc. Copy back the rest (not /etc) such 
as custom stuff in /opt back and it may just automagically run.

Of course in any case if you have compiled stuff yourself it may break 
since it may have been linked to higher version libraries than what you 
have with the downgraded system.
