At the technical level for technical people...  a LOT of things are easy. 
For the non-technical people...  the things that appear "obvious" to us --  
may not necessarily appear to be that way, regardless of the availability of 
STUN or outbound proxy.

The issue with most end users is quite simple.  They want plug and play.

The issue with most power users & Linux users -- is they want control and 
flexibility -- which they achieve by many means.   What we power users & 
Linux users consider to be easy and enjoy doing, other people find it 
frustrating and stressful.

STUN or an outbound proxy is useless in cases where the SIP traffic is 
absolutely blocked from the core of the internet service provider (which is 
the case in several countries we know first hand).

What exactly is so hard about SIP and NAT connections, you either use an
outbound proxy (which can get round multiple NATs btw), or you simply
setup STUN.
