Haven't done it myself, I've used fixed wireless providers, but over the
years I've had outages due to:
- line of sight blocked due to construction of billboard/buildings
- lightning strikes
- failed transmitters/receivers
- occasional fades due to rain/snow
Of course, there are the delays in restoration, since their tech isn't
going to climb a 200 foot tower in the middle of
night/rainstorm/snowstorm (I fully understand this one - I wouldn't want
them to do it).

Should also mention the phone call in a few years...
Our link is down... spend a few hours trying to fix it remotely.
Go to site... spend a few hours trying to see what's wrong with the hardware.
Go up on roof... bring binoculars... take a look at remote sites... can't find
remote site... new building in the way.

Just want to mention, how are you planning on hitting the non-line of site
locations?
If there is an existing wireless network in the area, might be better to
utilize their services instead.
One other point about NLOS. Are there any sites that are completely NLOS? If
all sites can see at least one other, it's a simple matter to relay through
another site. It's just Ethernet that can be connected to any switch.
