A few months back I felt the same way (about building my own images). I then purchased VMware (Fusion) for my MacPro, downloaded a minimal Virtual Appliance (Ubuntu-6.10.10, is what I chose at the time) and started the learning process.

Not only can you build custom asterisk images, I have a net4801 astlinux image without asterisk/zaptel serving either as a NTP time server or an OpenVPN server. I just returned from my parents updating their net4801 to an asterisk 1.4.18 custom SIP/IAX2 only astlinux trunk build. The VMware approach also has the advantage of creating multiple build 'snapshots' so you can try multiple different trunk builds for testing. Of course, the VMware approach is somewhat slower than a native Linux box, about an hour for a full build from scratch. Highly recommended.
