And I posit that not all audiophiles who spend money on expensive gear
are "rich".

As a high end audio dealer, I see plenty of these folks.  The majority
are still looking to get their money's worth.  I'll agree that whether
they spend $2000 or $1500 on something is possibly not a big deal for
them; however, if they feel $2000 buys them something that contains
things (eg. a DAC) they are not going to use, they will think they are
overpaying and will look for something else.  They'll come back to it
if there's nothing else available.

The material cost of a DAC-less Transporter would absolutely cost less
than a standard Transporter.  Why wouldn't it?  You can argue that it
might increase SD's overhead to manage having to market a 3rd product
in the their product lineup, but that would be a weak argument if there
was a legitimate market for a DAC-less Transporter.

But the target market for this type of device would want 35ps jitter
specification at the SPDIF output, and this would require a lot more
than a fancy knob...it would require everything that is in the
Transporter minus the DAC, the DAC's power supply, and the analog
output circuit.  So it would definitely be above a $300 retail
pricepoint...the power supplies alone would put it over $300...
