It just so happens that, when it's at full volume, the most significant 16 of those 24 bits is the same as the original 16 bits that were streamed to it from Slimserver (and the bottom 8 bits are all zero). If you pass a 24 bit SPDIF signal to a 16 bit DAC, it simply ignores the bottom 8 bits.
