That is true for me also.  I believe it has to do with some setting
about encoding in the background, but I do not have EAC in front of me
at the moment to look.

Even so, I have found that if I get too far ahead of the encoding then
it can be somewhat problematic if I encounter errors on a track and
have to re-rip it.  Specifically, there are timing issues because the
WAV from the first rip may be there, or it may not.

Admittedly, this is not a huge deal, but I prefer not getting too far
ahead of the encoding for this reason.

The re-tagging once vs. twice issue holds more weight, IMO.
