I'm in New Zealand for most of February, with limited Internet access, so I hope Gary, Michele, and others can answer most of your questions. To get started, I suggest reading some of the material mentioned (and linked to) from the OOoAuthors first page: in particular the style guide, writers' guide, and chapter template.

For Calc specifically, go to the UserGuide 3 - Calc section of the website (sorry, I don't have the exact address handy) and look up the outline. It's quite general in places, not listing all the topics planned or written, but should give you an idea of what's happening with the book.

You might like to start by reviewing any of the Calc chapters that are on the Review List (lower left-hand column of the website's front page after you log in), before plunging into writing a chapter or completing one of the partially-written or partially-revised ones.
