AS3Dmod is a very nice modifier library that works with Away3d, and the Perlin modifier is a very simple way to make a plane look like a blowing flag: http://code.google.com/p/as3dmod/
Otherwise, I've had success just running the updateVertices loop before the render. There may be a better way I don't know of.
