Oh yes the z issue makes perfect sense!
In fact now I explain why the z value does not always reduce but rises too.

Anyway, though I understood this, I can't figure out how to avoid it...

you're moving the camera to the left, you're expecting to see the
target move out of view.  Due to the fact that it's automatically
targeting your object, it's constantly turning toward it as it moves
