David, The Pel on the birth record is most likely the shorthand for Pimentel. You see this a lot in older records. Roiz for Rodrigues, Ant for Antonio, Ma for Maria. etc
I have ancestors also that had a pai incognito and a named mother from Corvo. With a name like Maria Coelho, you are likely at the end of the road. Coelho is one of the most common names on Corvo, Maria, the most common womans name. I have the Flores marrige book here.
