I have to agree, the flavor & texture of the linguica & chourico isn't the same in Calif. as the ones from Mass. I was born & raised in Mass. & I have now lived in Calif. for 20+ years. I have tried most of the ones from Calif. & I must be spoiled because I just don't like them. It changes the flavor to the soups and whatever else we put them in. I do order Gaspar's a lot! We have the Mexican style of Chourico here in Spring. I have tried it but the meat is ground so you don't know what they put in it. The flavor is OK but it does not compare to the Portuguese style in texture, aroma and taste. The Mexican style works good in chili. My last trip to New Hampshire I came back with 5 lbs. of Fall River Chourico in my luggage.
