Dear Lloyd, Since brix is a measure of dissolved solids in the plant juice, higher brix DOES correlate to lower freezing points. The freezing point of water drops a degree or so for every mole of dissolved solids--I forget the precise figure. Surely Elaine knows this if she reflects on her basic knowledge of chemistry.
