Things you might want to try with a couple of the jpgs that won't display:
Edit them with a graphics editor: do a save-as to another format (bmp or tif). Open the new image and do a save-as back to jpg and see if the re-saved images show up after a rescan. If they do, you might want to consider using a freeware utility like jhead and a batch script to strip out cruft that might be lurking in the jpgs that makes them unpalatable to SlimServer. Also, you might try renaming a folder.jpg or two to "Album Title.jpg", except, have it reflect the actual album title. Then add %ALBUM to the artwork file name format field in Server Settings->Interface. Lastly, if you are using flac as your audio file format, consider embedding the jpg into the flac files. Metaflac will do it and you could craft a script to mass-embed you whole library in one go.
