If it's something you want to be able to teach fairly quickly and play with a variety of people: Mr. Jack - The more experienced player should be Jack at least the first couple of times. Blokus - takes literally 60 seconds to explain.
If it's something you and a small number of opponents will be playing repeatedly: Race for the Galaxy - The iconography can make this game a little bit of a slog the first 2 or 3 games for someone, but after that you realize what it all means and the iconography becomes *incredibly* helpful and intuitive. Dominion - Actually pretty simple to learn, but I think it really pays off after a few dozen plays.
