If engineered flooring gets wet for even a fairly short time it will often swell along the edges of each piece. The laminations can separate or one or more layers may swell a little. Water wiped up quickly as for example when washing floors isn't an issue and some resist it better than others.
Just a caution. I have seen it used in kitchens but never in bathrooms but I don't know if that is some sort of rule. I suppose cork laminated floors are a type of engineered floor and they certainly are used in bathrooms.
